I think its partly cause the neckline sits flatter than crew necks, which makes layering under jackets way easier without adding bulk.The texture point on cotton-hemp blends is spot on btw.
I also feel cotton allows them to finish the neckline easier without ribbing, and roll necks look good with that sort of rolled edge. I base this on nothing, it's probably not hard to do with wool, but I feel like I might be right.
